Cancer is arguably a patient's greatest worry when visiting the doctor. It is everyone's worst nightmare. It changes the lives of its victims and, in some cases, ends them. In her book, Cancer Doe sn't Scare Me Anymore, Loraine Day makes the case for cancer as a teacher and a wake-up call. Most cancer survivors-and there are many-affirm that cancer changed their lives for the better. Cancer is not a single disease, but a group of many diseases with a common characteristic: uncontrolled, invasive cell growth at the expense of normal cell growth. Various factors transform healthy cells into cancerous cells that wreak havoc over orderly cell growth. Cancer is classified as an ailment of the immune system that can manifest in several forms with varying consequences. Let's get some terms straight. Carcinoma is a tumor that originates on the skin or in glandular tissue, while sarcoma is a type of cancer that affects the connective and supportive tissues. Skin cancers are called melanomas, while lymphoma and leukemia affect the lymphatic systems and blood-forming organs, respectively. Although it is one of the most dreaded diseases, cancer is not inevitably fatal. Today, more and more screening tests are readily available to detect cancerous cells in early stages. Early detection and treatment combined with a healthful diet enhance the prospects for preventing and conquering this malevolent disease. Causes There are more doctors and scientists alive in the world today than there were 100 years ago, yet we have more cancers. What has changed? Arguably, it is our diet of mass-market, processed foods. We take good whole foods such as grains, remove the germ (because it's perishable), remove the bran, bleach out the uneven color, and add synthetic vitamins to replace the ones removed, all in an effort to achieve a longer shelf life for the product. Have we exchanged shelf life for human life? The Standard American Diet (SAD) today is floured, frozen, boiled, broiled, canned, sugared, preserved, packaged, and laden with pesticides. Is it no wonder we are sick? This is why we have immunological weaknesses and nutritional deficiencies. We may even pass these on as genetic tendencies. Added to this is our over stressed lifestyles, polluted air and water, and unhealthy work environments. If you work in a plastics factory and breathe in polyurethane fumes month after month, year after year, is it such a surprise that you might develop liver cancer? Shouldn't you have quit after your first warning-when you contracted emphysema? Our body may provide a barrier, but it is not a cement wall. Pollutants make it into our blood and our cells. Ultimately, when our cells become compromised, they misfire and go haywire, mutating and growing abnormally. Over time, the cells in these "dead zones" start to darken, choking on bacteria, yeast, fungi, and toxins. They cannot get enough oxygen. You have become a victim cancer. Diet Suggestions We can control where we work. We can control our lifestyles, and most important of all, we can determine our own diets. Choose, for example, not to eat pesticides with your salad. Avoid food additives such as preservatives, colors, nitrates, nitrites, and MSG. Be suspicious of artificial foods such as olefin, cyclamates, and saccharin and food processed by barbecuing, smoking, frying, irradiation, as well as the use of overheated oils and genetically modified crops. Such methods should be replaced by methods that preserve nutrients, such as steaming, broiling, and baking, and by eating lots of raw, organic foods. The National Cancer Institute and National Institutes of Health recommend eating 5 fruits and vegetables each day. They now realize that raw foods are the best sources of phytochemicals-natural plant compounds that enhance our immune system and inhibit cancer. In other words, even if you are not a vegetarian, you should eat like one. Vegetarians generally have a lower risk of contracting cancer. In a study published in the New England Journal of Medicine, vegetarian women had a 46% lower risk for contracting breast cancer than other females. Whether we like it or not, many types of cancers are treated with chemotherapy. These are highl y toxic drugs that thrash our immune system and cause nausea, hair loss, weight loss, and, ironically, even cancer. The best way to bolster a weakened immune system is through a low-fat diet that is rich in antioxidants, unprocessed whole foods with no additives, soy products, and pesticide-free fresh vegetables. Fresh squeezed juices supply those nutrients in a readily absorbed form, with all their botanical co-factors in place. Also, don't forget to drink lots of pure water daily and enjoy phytochemical rich teas like green tea. Foods That Help Since fresh, organic fruits and vegetables are the best anti-cancer foods, strive to buy from the local farm or take up gardening. It doesn't get any better than eating food fresh from your own garden. If you live in a city, or don't have a green thumb, consider indoor gardening with sprouted vegetables. Sprouts usually have a growing cycle of about one week, and there is no messy soil. Since sprouts are baby vegetables, they contain concentrated amounts of nutrients and phytochemicals. Broccoli sprouts represent the highest known source of the potent phytochemical sulforaphane, which stimulates the production of powerful cancer killing enzymes. While all cruciferous vegetables such as cabbage, broccoli, radishes, and cauliflower are important, their sprouts contain 20-50 times more sulforaphane than the mature vegetables. Alfalfa sprouts are one of the finest dietary sources of canavanine, an amino acid analog that can prevent the growth of pancreatic, colon, and leukemia cancers. (See "Broccoli" and "Alfalfa." Legumes and soy products such as tofu, miso and soy milk are good sources of anti-cancer agents as well as protein. Blue-green algae foods such as spirulina and chlorella, are the planet's richest sources of protein loaded with genetic material RNA and DNA to bolster our immunity. (See "Algae") Fruits such as apples, red grapes, grapefruit, and lemons all have cancer preventative properties, and strawberries protect against the potent carcinogen nitrosamines. Even the lowly fig can shrink tumors. The list goes on. (See the various individual foods and herbs in this book for more details about their cancer protective abilities.) Nutrients and Herbs That Help Antioxidants are some of our best cancer fighters. They protect us from the free radical scavengers that turn our cells malignant and age our bodies. Some antioxidants even reduce the toxicity of chemotherapy drugs. Some of our most popular antioxidants include vitamins A, C and E, beta carotene, selenium, coenzyme Q10, bioflavonoids, and grapeseed extract to name a few. Coenzyme Q10 actually increases the life expectancy of patients by five to 15 years for various forms of cancer. Vitamin C also reduces the pain associated with some cancers and can minimize the toxic side-effects of chemotherapy. The fat soluble forms of Vitamin C are much more effective than the water-soluble forms. Shark cartilage, as well as vitamin E, cuts off the blood supply to cancerous cells in some tumors, giving the immune system a better chance to destroy the smaller tumor mass. Many herbs act to prevent and control cancer-cell activity. Essiac tea, a mixture of sheep sorrel and other herbs, is purported to completely eliminate some types of cancer and has gained a devoted following. Wheatgrass juice is used by several cancer clinics for its ability to rejuvenate the liver, detoxify the colon, and cleanse the blood and lymph systems. Garlic and echinacea both fight tumors and enhance immunity. Ginger helps tame the nausea associated with chemotherapy, and green tea shows potential in the treatment of breast and prostate cancers. Some of the other herbs known for their anti-cancer benefits include ginseng, red clover, and rosemary. If you have cancer, don't give up. Fight. Our 75 trillion cells change every few months, so we are constantly remaking ourselves. You are not a statistic and cancer is not automatically fatal. When things get tough, you must get tougher.
